On February 18th, I was diagnosed with diabetes. My fasting blood sugar was 277. I wasn't very surprised, since I knew I was addicted to sugar and junk food, but I was chagrined. The doctor wanted me to take oral medication (Metformin), and I did, for about 4 days. A friend got me a blood glucose monitor from her work (they were discontinuing the line) and some testing strips. My very first test was 2 hours after I ate a 6" sub from Subway--blood glucose (BG) was 335! Yikes!
After cutting out almost all carbs for 2 weeks, and being very hungry and tiring easily, I discovered a new way of eating. This diet concentrates on eating a lot of saturated fats, monounsaturated fats (MUFAs) and very little polyunsaturated fat (PUFAs), along with moderate protein and some green veggies. Very little carbs and absolutely NO refined sugars or carbs.
I'm here to tell you that I am not hungry, and that I am steadily losing weight. Most of the fats I am eating are in the form of virgin coconut oil (VCO), rendered pork and duck fat, butter, cream, sour cream, etc. Some extra virgin olive oil (EVOO) for flavor. I eat eggs, liver, chicken, beef, pork rinds (they add a crunch like corn chips without the carbs). I eat veggies like broccoli and cauliflower (you can steam cauliflower and mash it in the food processor with cream and butter and it's very yummy), squash, onions, mushrooms. I've even been eating a small potato either baked or pan fried, with lots of butter and sour cream.
As I continue on this diet, I'll keep you posted. My fasting blood sugar this morning was the lowest it's been--159. The goal is to keep it under 140 and closer to 100 for fasting.
